  • Capital Farms Striploin steaks are cut from the ‘Rib Half’ of the Loin sub-primal. What this means is that the ‘Sirloin End’ is not present in our Striploin steaks. Steaks from this region are called ‘Vein Steaks’ and can lead to a relatively poorer eating experience. OUR BEEF

IS CORRIENTE BEEF NUTRITIOUS?

Short answer: YES.

Long answer: Along with being the best beef in Arizona, our beef contains important nutrients that your body needs. The recommended serving size is 4 ounces for raw beef (roughly 3 ounces for cooked). Beef delivers 10 essential nutrients; on average, a 3-ounce serving of cooked beef provides 175 calories and 21g protein (51% DV), B12 (41% DV), zinc (39% DV), selenium (38% DV), niacin (25% DV), B6 (24% DV), phosphorous (20% DV), riboflavin (14% DV), iron (14% DV) and choline (13% DV).

*DV refers to Daily Value, the amount of nutrient needed for a healthy adult on a 2,000 calorie diet.

WHY IS CORRIENTE BEEF HEALTHIER?

WHY IS OUR CORRIENTE MEAT SO TASTY?

Firstly, our cattle are allowed to graze the Sonoran desert for the majority of their lives. Here they collect the flavors from the native flora that they graze upon.

Secondly, due to unpredictable rain patterns and forage availability, our cattle need longer grazing periods. Think 18-24 months of up-cycling forage from the Sonoran desert.

Lastly, we grain finish our beef to combine the best of both worlds. By supplementing with grain for the last 200+ days our cattle can consistently produce steaks that are juicy, tender, flavorful and delicious.

HOW LONG CAN I STORE MY BEEF IN THE FRIDGE?

It is ideal to thaw beef in the refrigerator where it remains at a safe temperature (40°F or below). Most steaks will thaw in one day while larger items such as brisket or prime rib may take an additional day or more. After thawing, beef can be refrigerated safely for 3 to 5 additional days before cooking. During this time, if you decide not to use the beef, you can safely refreeze it without cooking.

HOW LONG CAN I STORE FROZEN BEEF?

For the highest quality, plan to cook our beef within 12 months. Beef will remain safe when stored constantly at 0°F or below; however, quality degrades with lengthy freezer storage. For best eating experience, the freezer should be set at 0°F or below and beef should remain packaged tightly to keep air from getting in. If beef is frozen without being sealed tightly, freezer burn may occur. The product remains safe to eat, but the areas with freezer burn will be dried out and tasteless and should be trimmed away.

WHAT DOES PORTION CUT MEAN?

We believe that artisan craftsmen, not machines, still cut the best steaks. Each steak is different. So, the knowledge of a skilled butcher can make the difference between a great tasting, consistent cut and one that provokes a negative online review.

For those reasons we prefer to use "Portion Cutting" for our pre-packaged steaks. Each steak is cut, trimmed free of excess fat, silver skin (seams), and miscellaneous muscles.

This tedious process results in exactly what your paying for! A 10oz Beef Strip Loin Steak is exaclty 10 ounces of meat with little excess. Each of our steaks are grill-ready and require ZERO prep work.

mRNA Vaccine?

Our Cattle have never and will never recieve the mRNA vaccine.

What USDA Grade is CF Beef?

Our beef is 4-5 years of age at harvest and not graded on USDA standards. As the age directly affects the grading system we opt to no utilize it. However, our beef has marbling within the ribeye that is similar to those cattle that typically grade "Choice" or better.
