Ranking Beef Breeds by Tenderness: A Winner in Corriente Beef

When it comes to enjoying a great steak, tenderness is a key factor that enhances the eating experience. Using the Warner-Bratzler Shear Force (WBSF) test, which measures the force required to cut through meat, ranking of various beef breeds based on their tenderness can be achieved. Here’s a look at how some of the most popular breeds compare, including Corriente beef. For this comparison, we’ll use Newtons (N) instead of kilograms to express the WBSF values. All steak samples were Longissimus dorsi (NY Strip/Ribeye) Steaks aged to 28 days and cooked to 160F (71C) internal temperature. For Corriente smampes; Longissimus dorsi (NY Strip/Ribeye) steaks from each half of the steer from 45hd to make n90 independent samples to pull 4 core samples from each. Equating to n360 WBSF test samples to comprise Corriente Fresh/Frozen values. According to our latest tests conducted at a 3rd party facility (Auburn University), our Corriente beef has WBSF values as follows:

Lower WBSF values indicate more tender meat. (1 kg = 9.80665 N)
*Corriente (Grilled Fresh) are Longissimus dorsi (NY Strip) Steaks that were grilled from a beginning temperature of 41 degrees F (fresh). 
*Corriente (Grilled Frozen) are Longissimus dorsi (NY Strip) Steaks that were grilled from a beginning temperature of 0 degrees F (frozen). 

Analysis

  • Wagyu and Piedmontese: These breeds are renowned for their exceptional tenderness, with WBSF values well below 40 N.
  • Angus, Hereford, and Charolais: These popular breeds also offer good tenderness, with WBSF values ranging from 36.77 to 41.67 N.
  • Corriente: While the WBSF values for Corriente Grilled Frozen are higher than wagyu and significantly lower than Angus, it still falls within data consistent with “USDA Tender” classification. It’s important to note that despite slightly higher Cooked Frozen WBSF values, Corriente beef is known for its unique flavor profile and heritage quality.
